Vegan Gingerbread Brownies with Espresso Glaze by @rainbowplantlife ❤️ Makes 16 brownies  Ingredients  2 tablespoons (14 g) flaxseed meal 1/4 cup (60 mL) warm water 6 ounces (170 g) 70% dark chocolate, divided 1 cup (120 g) all-purpose flour 1 teaspoon baking powder 1/2 teaspoon sea salt 6 tablespoons (~30-36 g) unsweetened cocoa powder 2 teaspoons ground ginger 2 teaspoons ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1 stick (1/2 cup or 113 g) vegan butter, cut into small pieces 1/4 cup (60 mL) plant-based milk (I used almond milk)  3/4 cup (144 g) loosely packed brown sugar (or coconut sugar) 1/4 cup (60 ml) molasses (not blackstrap) 2 teaspoons pure vanilla extract  Directions  Preheat the oven to 350°F/175°C.  Make the flax eggs. Mix the ground flaxseed meal with the 1/4 cup warm water, stir, and set aside for 15 minutes to thicken.  Prepare a double boiler. Add a few inches of water to a saucepan and bring to a simmer. Nestle a heatproof glass bowl that sits on top of the saucepan without touching the water to create a double boiler.  Chop 3 ounces of dark chocolate into small chunks and set aside.  Take the remaining 3 ounces of the dark chocolate and chop into small pieces. Place these chocolate pieces and the Plant Butter pieces in the heat-proof bowl on top of the saucepan. Allow the chocolate mixture to melt, whisking frequently until smooth and the chocolate is completely melted. Set aside to cool.  Alternatively, you can place the bowl with the chocolate pieces and the Plant Butter in the microwave on medium power and melt in 25 second intervals until mostly melted and smooth, stirring well between each interval.  In a medium bowl, whisk together the flour, baking powder, sea salt, cocoa powder, ginger, cinnamon, nutmeg, and cloves. 🌱😍 VEGAN PASTA E FAGIOLI! 📷 by @alexafuelednaturally 🚨🚨Recipe: Serves 4-6 •1 (14 ounce) can white beans (such as cannellini or great northern), drained and rinsed •4-5 large carrots, peeled and roughly coarsely chopped •1 yellow onion, roughly chopped •6 garlic cloves •2 tbsp avocado oil or extra-virgin olive oil •Freshly ground black pepper •1 (15-ounce) can crushed or diced tomatoes •1 bunch Dino kale, stems removed, roughly chopped •8 oz. small pasta noodles (I used gluten free elbow pasta) •6 cups filtered water + 1 tbsp bouillon paste (or 6 cups veggie broth)  Method: 1. In a food processor add whole (peeled) garlic cloves and pulse until garlic is roughly chopped then add roughly chopped carrots and onions. Pulse until the mixture is a finely chopped mixture. 2. To a large deep pot over medium heat, add 2 tbsp oil, once hot add the carrot, onion and garlic mixture. Cook on low for 20 minutes, mixing the mixture throughout cooking process. Season with a pinch of salt and pepper. 3. After 20 minutes, add the whole can of crushed tomatoes and broth. Simmer for 30 minutes (cook on low heat). 4. Meanwhile in a separate pot cook pasta noodles according to the directions on pasta box (....BUT! cook for 3 minutes less then what the box says) 5. Once the soup has simmered for 30 minutes add roughly chopped kale and white beans (that have been drained and rinsed with water) to the soup. Mix in, then once pasta noodles are cooked, drain the noodles then add to the soup. Continue to cook the soup for an additional 5 minutes, turn off heat, taste soup and adjust seasonings as needed. 6. Line a large baking sheet with parchment paper (not wax paper!). If baking the fries with the red Thai curry past, whisk it together with the coconut oil. Cut the potatoes into wedges and toss them together with the coconut oil and salt on the parchment paper. Bake fries for 30-35 minutes, flipping once, or until cooked through and golden brown. While fries are baking, mix together the ketchup and red Thai curry paste in a small bowl. You can make more or less of ketchup by adjusting amounts, if desired. Whisk 2 cups plant milk (I like using oat milk), 1 tsp garlic powder, 1/2 tsp dried thyme, 2 tbsp tapioca (or arrowroot). Heat in saucepan while whisking. Once warm, keep whisking and add 4 tbsp nutritional yeast. Continue to cook and whisk until sauce almost reaches desired thickness. Reduce heat to low and whisk in 1 to 2 tsp mellow miso (or to taste) until all dissolved. Add salt and black pepper to taste. Stir in some chopped greens and mix until greens just wilted. Remove from heat. Mix with about 3 to 4 cups cooked pasta and about 3/4 cup cooked white beans, or preferred amount.
