Late breakfast/lunch today: Kale and Mushrooms sautéed in sesame oil, apple cider vinegar, and jalapeño hot sauce with Pan-Fried Gold Potatoes cooked in rosemary olive oil, seasoned with garlic & onion powder, and mixed in with @miyokoscreamery vegan mozzarella and sun dried tomatoes, and a Soft-Boiled Egg with more rosemary olive oil, flake salt, and pepper. Hallo ihr Lieben ☺️ Gestern Abend gab es übrigens bei uns Grünkohl 🥬 mit Kartoffeln und Kassler 😋 Mit Kassler statt Mettwurst und selbstgemacht ist der auch super kalorienarm, gesund und trotzdem sehr lecker 😍👌 Die ganze Portion hat nur 349 kcal, 26g Eiweiß, 36g KH und 8g Fett 📊 Rezept: Zuerst 1/2 Zwiebel fein hacken und mit etwas Olivenöl-Spray in einer beschichteten Pfanne glasig braten. Anschließend 300g TK-Grünkohl (gehackt) und 150ml doppelt konzentrierte Fleischbrühe hinzugeben. Das Ganze für etwa 30 min köcheln lassen. Währenddessen 200g Kartoffeln (Gewicht ohne Schale) schälen, in kleine Würfel schneiden und für 15 Minuten mit dem Grünkohl gar kochen. Anschließend ein Stück Kassler (75g) klein schneiden und dazugeben. Zum Schluss das Ganze mit Salz, Pfeffer und etwas mittelscharfem Senf abschmecken👌 🇬🇧 kale with potatoes and Kassler Recipe: First chop a half onion and brown them with some olive oil spray in a coated pan. Then add 150g frozen kale (chopped) and 150ml vegetable stock and let it cook for about 30 minutes. Meanwhile cut 200g peeled potatoes in cubes and add them for 15 minutes to the kale. After that cut a Kassler (75g) in pieces and add it to the kale. First visit back to the garden since moving last month. It’s off to a slow start this winter with all of the new house project but going well otherwise. . Our new place has a huge yard but it’s as empty as this space once was, so for now this is my garden. I’ll be growing low maintenance crops here from now on, which is perfect this time of year because most cool season crops need much less attention than a typical summer vegetable garden. The main crops right now are garlic and kale, but there are a few other experimental greens mixed in. . What low maintenance winter crops do you like to grow?
Pretty close to emptying the fridge. 🍽This nourish bowl definitely helped with that. Just got rid of a chunk of the chickpeas I cooked this week and now just working through a lot of veggies. 🥬 In my bowl I have some jasmine rice, adobo roasted chickpeas, roasted zucchini, pickled cucumber slices and picked carrots. And yes I’m obsessed with tahini, there was a nice drizzle of it over my bowl. 🥣 . Adobo Chickpeas 1 can chickpeas, rinsed and drained 1-2 tsp adobo (I used @eatloisa) 1/2 tsp smoked paprika 1 tsp soy sauce . Set oven to 400F. Add chickpeas to a bowl and pat dry with a clean towel. Add seasonings and soy sauce and toss to fully coat chickpeas. Add chickpeas to a baking sheet and place in oven for 25-30 minutes, making sure to turn chickpeas half way (at the 15 min mark). Once chickpeas finish baking, allow to cook fully then enjoy. 🌻
