Blackberry Coconut Bars … 📝Ingredients (8 Bars) * 2 cups shredded coconut * 1 cup fresh blackberries * 1/4 cup coconut oil * Pinch of salt * 1 cup dark chocolate chips 👨🍳 Instructions 1. Puree the blackberries. 2. In a bowl or food processor, mix together the coconut, coconut oil, berry puree, and salt. 3. Press firmly into a pan ) ined with wax paper. 4. Freeze for at least 30 minutes. 5. Cut into 8 bars. 6. Melt the chocolate chips. 7. Coat bars in melted chocolate. 8. Refrigerate until set. . Superfood Ice Cream Bars … 📝 Ingredients (8 Bars) Crust * 1 cup pitted medjool dates * 2/3 cup water * 1/2 cup coconut flour * 1/4 cup cacao powder * 1/2 tsp salt Ice Cream * 2 cups raw cashews * 1 cup coconut milk* * 1/4 cup maple syrup * 1/2-1 tsp spirulina * 1/2-1 tsp turmeric * 1/2 cup blueberries, pureed . nstructions 1. Cover the cashews with warm water and soak for at least 30 minutes 2. Blend the dates and water. 3. In a bowl, combine the coconut flour, cacao powder, and salt. Stir. 4. Add the date paste and mix to form a sticky dough. If it’s too dry/crumbly add a few tablespoons of water. 5. Press into the bottom of a pan/dish lined with parchment paper or plastic wrap) 6. Blend the cashews, milk, and maple syrup until very smooth and creamy. 7. Divide into 3 bowls. Mix the spirulina into one, turmeric into another, and blueberry puree into the last. Add more/less to reach desired color. 8. Spoon/dollop the colors on top of the crust and swirl with the back of a spoon or a straw. 9. Freeze overnight. 10. Who else?💝 They're meaningful, eco-friendly and budget-friendly 🎄 Love, Yuki♡ These coconut bliss balls are vegan, gluten-free, refined sugar free,plant-based and super easy to make👌🏻 Ingredients for 24 bliss balls 180g| 2 cups desiccated coconut 30g| 1/4 cup almond meal Pinch pink salt @suncorefoods 2 tsp pink pitaya powder @suncorefoods dissolved in 1 tbsp water 60ml | 4 tbsp water 20g | 2 tbsp melted unrefined coconut oil 50g| 2 tbsp pure maple syrup 40g| 2 tbsp almond butter 1 tsp vanilla bean paste 180g non dairy dark chocolate to dip Place all the ingredients in a food processor and pulse until you get a sticky mixture. Add more water, 1 tsp at a time if it's not wet enough. Shape the dough into 1 tsp-large balls and place them over a lined tray. Freeze the balls for at least 3 hours. Melt chocolate over Bain-Marie or in the microwave. Dip the balls into the chocolate and decorate as you like. Place in the refrigerator to set for 10 minutes.

Made these heavenly Strawberry Coconut Protein Bars over the weekend and now I'm obsessed 😍🍓 Just can't tell you how delicious they are! I know they're not seasonal, but if like me, you always have a stash of summer berries saved in your freezer for winter time, you need to give them a try! Super easy to make with only 7 ingredients 🙌🏼 I've included the recipe for you here, so be sure to save it for later. Enjoy and have a sweet & productive week 💗 . Strawberry Coconut Protein Bars: 🔹1 cup unsweetened shredded coconut 🔹1/2 cup frozen strawberries (or other berries) 🔹1 scoop protein powder 🔹1/2 teaspoon vanilla extract 🔹2 tablespoons #dairyfree milk 🔹1/2 cup dark chocolate chunks, melted 🔹1 teaspoon coconut oil Instructions: 1. Add all the ingredients except for dark chocolate and coconut oil into a food processor and pulse until the berries are broken down and combined evenly into the mix. 2. Line a 5x5 inch dish with parchment paper and pour the batter inside. Flatten with a spatula and place in the freezer for 1 hour to set. 3. In the meantime, melt dark chocolate and coconut oil in a small pot over low heat. 4. Remove the dish from the freezer, cut into 8 slices, and dip into the cooled melted dark chocolate to coat. Return to the freezer for 10 more minutes and enjoy. Store leftovers in the freezer for best results and thaw for 5 minutes before serving.
TIP: EAT MORE DATES these are great for snacking, dessert, or putting them in cute little jars as christmas gifts! homemade gifts are always better than bought in my opinion - especially if they’re edible...🤪 .• pitted dates .• natural peanut butter .• @hukitchen chocolate gems .• whole almonds slice the dates open and scoop a small amount of peanut butter in the middle - dip the whole date into the melted chocolate until fully covered (I like to use two forks here to help get off excess chocolate) then place on a baking sheet lined with parchment paper. lightly press down a whole almond onto each date. place in the fridge until chocolate has hardened (about 30 minutes) - remove and eat! or place in an airtight container and store back in the fridge. hope you have a great rest of your week friends! #thepeachyprodigy
