It’s been a seriously long time since I’ve had this much FUN in the kitchen!!! #hellofreshpartner As you might not know, my nickname is “JJ Buffet” because I love eating at buffets and having lots of food. I am also a huge cook and I love learning about new recipes. . . I recently went over to a friend’s house for dinner and they cooked a delicious recipe from @HelloFresh and I was amazed with how organized the ingredients were in the box. It really saves a lot of time and hassle - from deciding what to cook, to driving to the grocery store and shopping for the ingredients. FALL ROASTED VEGGIES: Fall is time for all of the root vegetables! 🥕🍠🥔 This was the first time I had ever roasted purple onion and it was delicious! Recipe below👇🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ •Preheat oven to 425. Toss your veggies (I used purple onion, Brussels sprouts, sweet potatoes, and carrots) in 2-3 tbsp of olive oil then season them with a few shakes of cumin, paprika, garlic powder, salt and pepper. Roast for 30 minutes. Remove from oven, toss in pecans and dried cranberries and return to the oven until vegetables are done! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What are your favorite vegetables to roast?

Hedgehog doughnuts (vegan) . Ingredients . • 330ml of warm dairy-free milk • 2 packs (14g) of dry yeast • 75g of golden caster sugar • 620g of self-raising flour • 1/4 teaspoon of salt • 100g of melted dairy-free butter • 2 egg replacers • + • Vegan Nutella • Golden caster sugar • Dairy-free dark chocolate • Chopped pecan nuts • Sunflower oil (for frying) . Instructions . Doughnuts • Place the warm dairy-free milk into a bowl and sprinkle over the yeast and sugar. Stir, cover with a tea towel and put into a warm place for around 10-15 minutes until frothy. • In a separate bowl, combine the flour & salt and stir. • In another separate bowl, add in the melted dairy-free butter and vegan egg substitute. • Combine the dry mixture, yeast mixture and egg mixture into a bowl and stir. • Mix with a hand whisk or attach a dough hook to your stand mixer and begin to knead on medium until nice and smooth. • Pop the dough into a lightly oiled bowl, cover with a tea towel and place into a warm area (I placed mine in my warm conservatory) and allow to prove for around 2-3 hours or until doubled in size. • Once doubled, turn out the dough and roll around 45g of dough into balls and place them onto a lined baking tray. • Place the doughnut balls back into a warm area covered with a tea towel for around 1 hour until they have doubled in size. • Add oil into a deep pan until half - 3/4 full and bring to the boil. • Allow it to come up to 320 degrees. • Once the doughnuts have risen, gently lower them into the hot oil and fry for about 1-2 minutes on each side or until puffed and golden brown in colour. • Carefully take them out of the hot oil and place them onto kitchen paper towels to drain any excess oil. • Allow them to cool before filling and decorating. 🍂🍂continue in the comments🍂🍂
Sundried tomato, spinach and cheese stuffed chicken . Ingredients . • Two large chicken breasts • 3/4 cup Sun Dried Tomato Vinaigrette Dressing & Marinade (salt and pepper and olive oil would also work fine) • 1/2 cup sundried tomatoes • 1/2 cup roughly chopped spinach • 1/2 cup feta cheese • 1/2 cup mozzarella cheese . Instructions . • Marinade the chicken breasts in the dressing for a few hours • With a large sharp knife, carefully cut the chicken breasts like hot dog buns. Don't cut all the way through. • Open the chicken breasts up where you cut them and layer on the remaining ingredients. It's okay if you can't fit all of it in, you can just leave some out. Just squish in as much as you can. Stick a couple of toothpicks in near the opening to keep it all together. • Heat up a pan and sear the meat on both sides. You can lower the heat and continue cooking the meat on the stove until it's done or, if you're using a cast iron skillet, you can put the pan in the oven at about 375ºF. You could also just completely cook it in the oven on a baking sheet if you don't feel like searing it. Just make sure you cook it until the center reaches 165ºF on a thermometer.
