Festive Traybake 🤤 And she smashes it again with a traybake, obviously this time of year it would have to include pigs in blankets. Literally such an easy tray bake, I always wonder why I don’t make these more often as they are super simple and less washing up, win win 🥕 I added to a tray 12 frozen pigs in blankets, a bag of baby new potatoes, 6 halved carrots, 1 diced red onion & 200g of trimmed and halved sprouts (if you don’t usually like Brussel sprouts try roasting them absolute game changer). I also added salt, pepper, fresh thyme and a table spoon of olive oil and roasted on 200 for 45 minutes. Served with cranberry sauce on the side, obviously 🙌🏼- #festivetraybake #christmascooking
Bell Pepper Tuna Melts!!! My bf is a canned tuna hater and even he loves these. I used @primalkitchenfoods garlic mayo and @miyokoscreamery vegan mozz (cause they’re my faves), but you can use any type of mayo (vegan or otherwise) or your favorite cheese and customize it yourself. RECIPE BELOW  Also, just a reminder that my 7-day clean-eating meal plan ebook is out and on sale! Link in bio through my @searchmysocial link! You can also search for any of my Instagram content on there if you’re ever looking for anything  Bell Pepper Tuna Melts (makes 4) 2 bell peppers, sliced in half lengthwise, scooped out 2 cans tuna (I prefer in oil for flavor) 2 1/2 tablespoons mayo (I used @primalkitchenfoods garlic aioli mayo) 2 stalks green onion, finely chopped Salt and pepper to taste 4 tablespoons @miyokoscreamery mozz (this one is dairy free but you can use any cheese you want here really) 1/2 small avocado, diced  Preheat oven to 400 F. Place bell peppers face down on a baking sheet with some olive oil, and bake for 15 min. Remove from oven While peppers are cooking, mix together remaining ingredients, minus the cheese and avocado, in a bowl. Divide evenly into the peppers. Top with cheese, and bake for another 5 minutes. Finish off with a broil for 1-2 minutes, if desired. Top with avocado and enjoy!
Sheet Pan Dinner 🍴 Made my grandma and myself this easy chicken dinner tonight- packed with veggies + lots of flavor 😍 Keeping it simple over here after a busy day. Easy dinners always hit the spot + we have leftovers which you know I love 😎 - - My grandma had never made a sheet pan meal so I was kind of showing her the ropes. Thought I’d break it down here too my method behind how I make them. I pick a veggie, potato, and protein. Then I google about how long it takes to make them all at 400F. Based on that, I add them on to the pan at different times. For this actually, everything  took about 30-35 minutes so I added it all at once. For seasoning, I kept it simple and salt free because she watches her salt intake. Everything was ready in 35 mins + only one pan to clean up which was what I wanted after an afternoon of recipe testing haha. My grandpa is doing better every day but still recovering in the hospital, thanks to everyone for the warm thoughts and prayers ❤️ - - #dinner details 👉🏻 preheat oven to 400F  What you need:  2 chicken breasts  2 sweet potatoes  1 lb brussel sprouts  2 tbsp oil ( I used avocado but olive would work fine)  1 tbsp garlic powder  1 tsp onion powder  1 tsp oregano  Optional sprinkle salt and pepper.  Chop the sweet potatoes and cut the sweet potatoes in half. Coat with 2 tbsp oil then add to a sheet pan. Add your chicken breasts on top. Then in a small bowl, mix your spices. Brush over the top of the veggies and chicken. Bake for 30-35 mins depending on how you like your chicken. Easy peasy 👌🏻 #onepanmeal #easyrecipes #choosingbalance

CREAMY KETO PASTA 🍝 + SCALLOPS 😋. Eat or Pass? 😍 by @shredhappens . I’m going with this delicious and easy pasta dish starting with 3 net carb @almondlovewith pasta. This is probably one of my fav recipes with the pasta so far...slightly dangerous… you’ll be reaching for seconds in no time. . Super super easy to make: . 1.Cook a bag of @almondlovewith according to the directions. I went with the soft method, so I just soaked in water while water was boiling and boiled it for 12 minutes. . 2.While the pasta was cooking, I made the sauce. I started by melting 2.5 tablespoons of butter in a sauce pan, adding 2 cups of @josiesorganics spinach, and mixing for 1 minute. . 3. After 1 minute, I added 1.5 tablespoons of cream cheese and mixed everything well for a couple of minutes, then added 1/2 cup cream, 1/2 cup of shredded parmesan, and a couple of garlic cloves. Mix well on low. . 4.Give your sauce a taste and at this point you can add some salt, pepper, garlic powder, chili flakes, lemon zest, or some fresh herbs. You can do whatever you like and all of those are great options. . 5.Once the pasta is boiled, strain, add a couple tablespoons of the pasta water to the sauce to lighten it up if needed, and add the pasta to the sauce and cook for another minute or so together to get the flavors going. . 6.Eat as is, or top with your favorite protein. I added some @sizzlefishfit scallops that I blackened. . Super simple and HITS THE SPOT! Remember “SHREDHAPPENS” saves you 15% on a 4pack of the pasta! . Preheat oven to 350F and spray/line a baking sheet. 2. In a large bowl, whisk together the wet ingredients & in a small bowl, whisk together the egg and almond milk. 3. Pour the wet into the dry and stir until everything is well combined. 4. Use an ice cream scoop, two spoons, or your hand to make 10 bites. 5. Been super into rosemary lately.. not sure why! Avocado Toast on Sourdough Rye topped with Roasted Cherry Tomatoes, Rosemary-Infused Olive Oil, Flake Salt, and Pepper.  I much prefer the flavor of tomatoes roasted vs raw. They become so rich and full with flavor, and they even get a nutritional boost — roasting tomatoes helps bring out lycopene, an antioxidant.  To make roasted tomatoes, preheat oven or toaster oven to 425. Spread on a baking sheet and drizzle or toss with olive oil. Bake for 20-25 minutes until tomatoes look nice and wrinkled.

Being super intentional about my nutrition now that I feel like my brain can finally hang again. 🧠 One thing that’s always included in my diet? Heckin’ bread. Like I would be the grumpiest KP without food I love. It’s crazy to think now about how I eliminated so many faves for so long because they were “bad” in my mind.
