Almond Linzer Cookies! ❤️And the holiday baking begins!🎄 Made with light and sweet almond shortbread cookies stuffed with homemade raspberry chia jam. They are sweet, jammy, and pretty as can be. You'll want to save these to your baking list. I've copied the recipe below👇, and you can also find it on the blog. Link in profile. Happy December ya'll! #twospoons . . . Almond Linzer Cookies 2 1/2 cup all purpose flour 1/2 cup icing sugar 1/4 tsp salt 1/2 tsp cinnamon 1/2 cup almond meal* (ground blanched almonds) 1 cup vegan butter, cold 1/4 cup agave 1 tsp vanilla extract . . Raspberry Chia Jam (or sub with jam of choice) 1 cup raspberries, fresh or frozen 2 tsp chia seeds 1 tbsp maple syrup splash vanilla extract pinch salt . . 1. Begin by making jam: In a saucepan add raspberries, bring to medium-high heat and simmer raspberries until they are soft. Muddle with spoon. Add chia seeds, maple syrup, vanilla and pinch salt. Mix to combine. Simmer for another 5 minutes. Then remove from heat. Let cool and thicken (approx 20 minutes). 2. Sift flour and icing sugar into a large mixing bowl. Add salt, cinnamon and almond flour and mix gently to combine. 3. Cut vegan butter into rough chunks and add to mixing bowl. Massage dough with hands to combine the flour and butter, until dough is shaggy and loosely combined. Add agave and vanilla extract and mix to combine. Then bring together to form a dough ball. 4. Sprinkle work surface with flour and roll dough into a thin sheet, approx 1/4 inch thick. Cut round circles into the dough using a cookie cutter.* Then, using a mini heart-shaped cookie cutter, cut a window out the middle (to ONLY HALF of the cookies). 5. Preheat oven to 175C/350F. Line two baking sheets with parchment paper and place the cookies on sheet. Bake for 10-12 minutes, or until cookies are lightly golden in colour. Let cool completely. Optional to dust with icing sugar. 6. Take two cookies (one normal and one with a heart-shaped cutout). Place a
When I don’t have time to make my oats in the morning, or haven’t prepped them the night before, my go to breakfast is weetbix! It’s so easy to just chuck toppings on and they taste pretty darn good too 🙌🏼 Hope everyone had a great weekend! I had a good food day yesterday with a yum cha for lunch at @davidsprahran and then headed to @milkthecowmelb for cheese and wine. They made a delicious vegan cheese dish which tasted just like real cheese 🧀 I love how so many restaurants and cafes are adoptive of veganism - one of the perks of living in Melbourne! Anyway, this quick n easy breakfast consists of: 4 multigrain weetbix (@weetbixau), banana, blueberries, raspberries, strawberries, chia seeds (@thechiaco), homemade nut mix, a choc nut protein bar (@freedomfoods) and of course it was drowned in milk post pic cause I am a soggy weetbix gal 🥛

PB&J + FRIED BANANA TOAST! 🍌❤️ Fancy up your toast with caramelized fried banana, or cookie cut the slices into little hearts. I've included the recipe below.👇 And if you haven't had fried banana you are in for a treat! They become so caramelized and decadent. It's like dessert for breakfast. Happy thursday ya'll!✌️ #twospoons . . . PB&J + FRIED BANANA TOAST! Raspberry Chia Jam: 1 cup (120g) raspberries, fresh or frozen 1 tsp chia seeds 1-2 tbsp maple syrup (to taste) pinch sea salt . . Other ingredients: 2 slices toast 1 banana 1 tsp coconut oil . . 1. In a saucepan add raspberries and bring to medium high heat. Cook for 5 minutes, or until softened. Muddle gently with wooden spoon. Add chia seeds, maple syrup and pinch sea salt. Let jam simmer lightly for 2-3 more minutes and remove from heat. Wait at least 10 minutes to thicken and cool. 2. Generously lather two slices of toast with peanut butter and top with raspberry chia jam. Cut banana into slices and fry in a skillet with 1 tsp coconut oil for 1-2 mins each side. Top toast with caramelized banana. Or, cut banana into heart shapes and top on toast.

I’m about 3/4 done, but I hate leaving things to the last minute, and try and stay as far away from malls the few days before Christmas 😅🎄 I hope you all have a marvellous Monday! . vanilla berry #oatmeal: •bring 2/3 cup of water to a boil •reduce heat, and add 1/3 cup @bobsredmill #glutenfree rolled oats •stir in a chunk of a frozen banana •once all the liquid has been absorbed, remove from heat and add a handful of frozen raspberries, 1 tbsp chia seeds, 1 scoop @ancientnutrition vanilla collagen powder, and a sprinkle of cinnamon •transfer for bowl, then add toppings! I did banana slices, plain greek yogurt, @maranathanutbutters almond butter, and @beekeepers_naturals bee pollen!

Banana split, breakfast style. Sometimes I just want something quick and satisfying, and this is when my fully loaded breakfast banana split does the job. One banana, sliced down the middle, filled with lots of thick @biotiful_dairy kefir quark yoghurt, @rudehealth original granola mixed with maca powder + chia seeds, and a dollop of @pipandnut pumpkin spiced almond butter. Gingerbread Chia Pudding!❤️✨ I can't stop it with the gingerbread.👅 But this one's a healthy sweet treat for you to nosh on during December. Made with creamy almond milk and holiday spice like ginger and cinnamon. Only 5 ingredients, and so easy to make. Enjoy for breakfast or snack time, and throw in a jar if you’re on-the-go. . . Gingerbread chia pudding (serves 2) 1/4 cup chia seeds 1/4 tsp ground ginger 1/4 tsp ground cinnamon 1.5 cups almond milk 1 tbsp maple syrup 1/4 cup pomegranate seeds, for topping (optional) cacao nibs, to sprinkle (optional) coconut flakes, to sprinkle (optional) . . 1. In a bowl combine chia seeds, ground ginger and cinnamon. Pour in almond milk and maple syrup. Whisk to combine. Let sit for 5 minutes and whisk again to remove any clumps. Cover and place in fridge for at least 30 minutes to set (the longer you wait the thicker it will become. See notes below). 2. Remove chia pudding from fridge and whisk again. Pour into two cups and top with pomegranate seeds. Sprinkle with cacao nibs and coconut flakes. . . Notes: Chia pudding will keep in fridge for up to three days. It's recommended to wait at least 30 minutes before eating, but the longer you wait the thicker it will become. I like to prepare my chia pudding the evening before and let it set in fridge overnight.
