I’ve been so sore lately with running and lifting that today, I decided to take an active rest day. I started my morning with an hour of hot yoga, followed by some time in the sauna and then steam room and a cool shower at the gym. I’ve never felt better. Honestly, rest days are totally necessary to heal and recover. Then since I was in all zen mode, I decided to make this big salad for lunch. This might look like it took me hours, but I threw this together in less than 10 mins. Don’t believe me? Go watch my stories! What’s in this salad? 1/4 an avocado, pan seared wild salmon, radishes and carrots on a bed of organic spring mix salad sprinkled with some broccoli sprouts that we sprouted ourselves! It was dressed by drizzling herb infused olive oil, fig balsamic vinegar and fresh cracked black pepper. So fresh, so clean, so delicious! I’ve been craving all the fresh summer foods now that it’s warm out☀️Made this summer salad on a whim tonight and I can’t get over how good it was! 🥬🍅🥑🥗All ingredients are from Trader Joe’s (what’s new) and the recipe is below! Enjoy!!😋 Mix the following ingredients together in a large bowl: - Sorrento mix- spinach, arugula, and lettuce (I like to chop it up into smaller pieces) - Cherry tomatoes - Organic tricolor quinoa (probably about 1/4 cup cooked) - Asparagus chopped and sautéed in avocado oil until tender and seasoned with lemon pepper and salt - TJ’s Green Goddess salad dressing - Parmesan, Romano, and Asiago cheese blend - Blackened Salmon: Trader Joe’s fresh Atlantic salmon fillets seasoned with salt, black pepper, paprika, cumin, and garlic powder and cooked in a non-stick pan with 1 tsp of ghee over medium/high heat for 2 minutes with the skin side up, and then for 6-7 more minutes with the skin down Squeezed some fresh lemon juice and cracked black pepper on top and it was delishhhh
Easy salads are what I am about most of the time. This weekend, after all the rich and heavy foods I had all weekend, a nice crisp salad was calling my name. I went to Kroger and found some of their chopped bags of lettuce for $1, it had lettuce, kale, carrots, cabbage, and sprouts in it. Total win right? I felt like @girleatketo would be so proud of me being thrifty and getting awesome salad makings. I topped it all the things I love from my favorite salad from BJs Brew house. Turkey (left over from Thanksgiving), @tillamook cheddar, cherry tomatoes, bacon, avocado, blue cheese, and some fresh pepper. I ended up mixing it all together with ranch and finished every single little piece, it was divine. I have actually now eaten two of the same salad and guess what is for dinner tonight? Salads are one of those things that I love to run to when I know I want a lot of different flavors all thrown together in a bowl. I love protein packed salads like this for lunch or dinner 🤗🥑🥗💚 I loaded these with red quinoa (cooked with umami rich homemade veggie broth!), crunchy chickpeas, avocado, black sesame seeds, radish, tomatoes, lettuce and spinach- drizzled with a Lemon, EVOO, S&P dressing! Sure tasty and easy to make! Just how I like it!! 😋👌 . I’m working on 3 broth recipes at the moment... sometimes i just crave a biiiig salad, anyone else🥗?! for this one i threw in just about everything that i had in the fridge... chopped romaine, spinach, kale, roasted sweet potatoes, artichoke hearts, black beans, red onion, avocado, and cucumber with a lemon tahini dressing on top 🌱🌿. more color in your bowl = more antioxidants and microbiome boosting foods! this meal alone had over 10 different types of plant-based veggies... make it a challenge to eat new and different plant-based foods every week ☺️🙌🏻.
Today’s #sassydesklunch working for her closeup. (I feel like people don’t get as excited as I do about bowls of greens, but I’m gonna keep posting them. I must live my truth. 💁🏼♀️) In this bowl: baby arugula, butter lettuce, thinly sliced cucumber, avocado, plum, smoked chicken breast, hemp hearts, salt and pepper and a drizzle each of olive oil and white balsamic. For the record, this would be an amazing summer side salad (sans chicken) with any meat or fish. Would also be bomb with some roast chicken or sliced steak and goat cheese...

Ginger Vinaigrette: (Serves 3) 1 tbsp grated fresh ginger 2 tbsp olive oil 1/2 tbsp white wine vinegar 1 tsp aged balsamic vinegar Black pepper to taste My salad include: Kale, broccoli, radish, cucumbers, cherry tomatoes, and bell peppers.
