The #recipe you’ve been waiting since the last post ! #freshveggies#polishsausage#sausage mixed together bring on a plate #leczo  #ingredients : • 3 peppers (I used red, yellow, orange)• 250 g mushrooms• 2 small zucchini• 350 g sausage• 2 onions• 1 tablespoon tomato paste• 750 ml tomato passata (or thick tomato puree)• 4 clove of garlic• 2 tsp of sweet pepper• 1 tsp hot pepper• olive oil  #preparation : I get ready my #veggies . I chop the onion into feathers and chop the garlic. Then I fry the onion and garlic in oil on a medium heat. 🔥  Meanwhile I cut the sausage and rest of my vegetables into slices, cubes. I add sausage, peppers, spices (sweet and hot peppers) and concentrate to the onion. I fry the whole for a few minutes. I clean the mushrooms and cut them into quarters, cut the zucchini into semi-slices and add to the pot with peppers. Next what I do is - I pour all over the passata, cook for about 30 minutes. If the stuff in the pot is too thick, I add half a glass of water and season  to taste. {NEW} Greek Chicken Soup 🍋🌱 Ready for Soup Season?!! 🙋‍♀️ We sure are over here at the CFC Headquarters (aka my family kitchen). I love soup for many reasons, but especially because it's very filling and a healthy, economical choice for our large family.  Many nights each week there is a big stockpot full of soup sitting on the stove as hungry teenagers begin to find their way home.  Have you ever had this type of lemmony Greek soup? You may have not even known there was even eggs in the broth because they are virtually undetectable unless you know.  Avgolemono is a traditional sauce made of chicken broth, egg yolks and lemon juice. The final result is a slightly creamy, bright tasting satisfying chicken soup.  You are in for a treat!  The addition of eggs simply adds a creamy richness without using any dairy.  The eggs also contribute nutrients and protein to this soup.  And, YES, as long as you follow the directions below, your eggs will be fully cooked in the hot broth.  makes 6 servings  Ingredients: 2 Tbsps olive oil 1 lb. chicken breast or tenders, cubed into bite-size pieces 1 large yellow onion, finely diced 2 large carrots, peeled and diced  3 large celery stalks, diced 4 fresh garlic cloves, minced sea salt and freshly ground black pepper to taste  8 cups chicken broth, or stock  1 bay leaf 3 large eggs, room temperature  juice of one fresh large lemon 4 Tbsps fresh dill, to garnish  Instructions:  https://cleanfoodcrush.com/budget-friendly-greek-chicken-soup/
{NEW} Bacon Wrapped Cabbage 🌱🥓 We make roasted cabbage OFTEN around here because it's something (a vegetable) the whole family agrees on.  This variation uses the bacon grease to crisp up the cabbage and add flavor instead of the typical oils.  There are many high quality bacon options these days. Look for nitrate free, and humanly raised if possible.  We enjoy bacon once or twice each month at our house because it's something we really (really) enjoy.  makes about 8 servings  Ingredients: 1 large head green cabbage 1lb. thin bacon slices, nitrate free freshly ground black pepper, to taste 2 Tbsp thinly sliced green onions  Instructions:  Preheat your oven to 375 degrees f. and line a large baking tray with parchment paper.  Using a very sharp knife, cut the cabbage into small wedges.  Wrap each wedge with a slice or two of bacon, and insert toothpicks to secure.  Place wrapped wedges onto your prepared baking tray, leaving a bit of space in between each so that they can crisp up.  Bake for 40-45 minutes, flipping the wedges halfway, or until cabbage is tender and bacon is crisp.  Sprinkle with freshly ground black pepper and green onions and enjoy!  Enjoy! ❤Rachel

Seeing that it was mental health awareness day last week, it naturally stirred up some feeling for me. I wanted to get a post up and spread more awareness about it, but some days/weeks it feels as if even thinking about what I’ve gone through gives me PTSD, so I just end up trying to make it through each day by reminding myself how far I’ve come. It’s hard not to think about what my life was like before the anxiety and depression. It makes me sad and draws me into a deep dark hole. Plus it’s been one of those weeks for me. Every recipe I test is a fail. Hodor my poor pup has had the runs for three days and has kept me up all night...again. I have doctor appointments I need to keep up with for the pregnancy and I’m exhausted to say the least. But like that song goes, when the going gets tough, get going. All I want to do is crawl into a corner and eat this spicy Mexican chocolate cake, but that’ll have to wait for the weekend. For now, it’s back to the grind, and you can find the recipe for this Halloween cutie on the blog. Black Bean, Spinach and Cheese Quesadillas 💯 Loaded with black beans and spinach and as much (or as little) cheese as you desire, these healthy pockets of goodness are super easy to make and are ready in just 15 minutes! HIT THE SAVE BUTTON and make them tonight! . INGREDIENTS: ▪️1 can of black beans, drained/rinsed (approximately 540ml/19fl.oz) ▪️2 tablespoons of taco seasoning ▪️1/3 cup of water ▪️3-4 tablespoons of taco sauce ▪️Spinach ▪️Shredded cheese (any kind) ▪️Large tortillas . DIRECTIONS: 🔹️Stove top, heat a large non stick pan. Reduce to low-medium heat and add black beans, taco seasoning and water. Mix all together for approximately 3 minutes. 🔹️Add taco sauce and mix for 1 minute. At the same time using a spoon or fork slightly crush black beans in the pan (just a few times, not completely). 🔹️Remove pan from burner and set aside. 🔹️Using a new/clean pan, heat on medium and spray with cooking spray. Add one (1) large tortilla to the pan. Sprinkle entire tortilla with shredded cheese (as much cheese as you wish). 🔹️Layer half the tortilla with black beans and then spinach (both on the same side). 🔹️Using a spatula, fold the tortilla in half - the side with cheese only to be folded up over the beans and spinach. Press down firmly with your spatula to ensure the tortilla sticks together. Cook for 2-3 minutes then flip over and cook for an additional 3 minutes on the other side until both sides are golden brown. Repeat again until all bean mixture is used up. Makes approximately 3 quesadillas (using 3 large tortillas) 🔹️Slice into wedges and serve with sour cream and/or salsa 👌 .
