Tessa is showing off this lovely Pink Banana Squash which she puts into our riff on the classic tikoy. A sweet rice cake enjoyed in the Philippines during Chinese New Year, we make ours savory with this squash and fermented spinach before topping it with a crispy smelt and ginger air. Talk about flavor explosion 🤩🤯
I was lucky enough to be invited to @restaurantmaguk & @mca_insight Generation Next conference and the walking restaurant tour to @arcadelondon in Tottenham Court Road. This pork sandwich had a delicious sweet onion chutney and shredded lettuce in toasted bread.
Is there anything more beautiful than freshly baked bread and an open wood fire? These cooler days make us love these two things more than ever! We love the challenge of cooking rustically. There are no fancy proofers here, just resting near the open flames is how we proof our loaves 🔥 😋💕
