Happy autumn! 🍁🍂 This is a spaghetti squash dinner I made this weekend. One of my favorite parts of this season is the seasonal foods, including spaghetti squash, pumpkin, butternut squash, beets, pears🍐and sweet potatoes🍠! Some of my favorite fall recipes include roasted sweet potatoes, butternut squash soup, pumpkin stew, beet and kale salads, and poached pears.😋 * * * We can all get almost any fruit/vegetable all year round at the grocery store, so why eat anything “in season”❓ . . 1. Seasonal food’s growth is supported in our local climate. The average American’s food has travelled 1,500 miles to get from it’s source to our plates* ✈️🚛🚚🛳. 400 gallons of oil are consumed annually PER PERSON for agriculture!* We reduce our individual use of fossil fuels by eating seasonal food that hasn’t travelled across continents to get to us. . . 2. Produce is at it’s peak when you buy it in the season it grows best! Also, because seasonal produce has been grown more locally, it has been picked closer to ripeness. This means it’ll have a sweeter, better texture than any other time in the year! . . 3. You can get the most nutritional value out of foods in-season; produce are most nutritious in their best growing conditions, and when they haven’t lost nutrients in transit from growing on the other side of the world! . . 4. It's been a loooong time since I've cooked. I'm starting off again with something simple, calabacitas con garbanzo y aguacate. I made this how you normally make calabacita a la Mexicana, then just added garbanzo in the mix for protein. It's a good combo!  Ingredients: Cebolla Ajo Cilantro Oregano  Calabacitas Jitomate 🍅 Aguacate 🥑 Salt Limón Salt  Heat up diced onions and garlic for about 5 min in a pan. Then add tomatoes and calabacitas and mix with salt and oregano for a few more minutes.  Mix in the garbanzos then let simmer for about 20 min. While I was sitting in traffic yesterday, I was daydreaming about a creamy pumpkin sauce. I asked myself, "how are you gonna make that happen and what are you gonna do with it?"⁣ ⁣ I thought, "hey what about a PUMPKIN ° TAHINI ° COCONUT MILK sauce?" Then, when I got working on it, I thought APPLE CIDER VINEGAR would go perfectly with that combo. I'm gonna call this my PUMPKIN GODDESS SAUCE. It's fall and we're celebrating the nutrient-rich superfood, pumpkin, in all its forms. ⁣ ⁣ For the main dish, I decided to roast a couple of ingredients like Carrots, Parsnips, Tofu and Leek. Tossed those with a cooked pasta, coated that mixed that with this creamy pumpkin sauce. Then popped that badboy in the oven for 5 mins at 400F.⁣ ⁣ The end result is an incredibly rich, earthy, savory & sweet dish. TBH, I would definitely make this again. How do you choose to nourish your body?  The number 1 question people ask me is how long have I been vegan for.  The number 2 question people ask me is how do you get enough protein, followed by you can’t get enough protein on a vegan diet.  Let me tell you this... _____ I know my body and I’ve been living in it for 23 years where nearly half of that I was vegan (10+years)... _____ I know what my body craves, but also what it needs.  Aside from that, the average person consumes much more protein then needed to sustain their body/build muscle.  So here is what a typical day looks like for me... 🍌Overnight oats or bircher with either just almond milk or water+ a bit of protein powder (depending if I want something sweet) and some fruit. 🍛stir fry with lots of veg, usually tofu, tempeh or chickpeas, served with rice or quinoa 🥄Bean/chickpea bake or vegetable curry somethin or other 🥗 and lots of veg throughout the day! 🥕or🥒 with hummus is one of my fav snacks And I usually have🍠baked and on hand! On average I would assume I get around 100g of protein without trying but could easily get 120-140 if I put in a little effort. In the fitness world people are told you need at least your lean body mass in grams of protein, but you really don’t. Sure, getting adequate protein is important, but really when it comes to building muscle your main focus should be  on getting enough calories in general.  Swipeee for a close up!
