Special request last night from my little guy for some Choc-berry Cookies so I whipped up a batch. Nut free so good for the lunchbox. ▪ 1.5 cups wholegrain rolled oats 1 cup wholemeal spelt or wholemeal plain flour 3 tbls coconut flour 1 tsp baking powder 1/4 cup coconut/EV Olive oil 4 tbls rice malt syrup or honey 1 egg 1/3 cup frozen raspberries 1/3 cup dark chocolate dots 3 tbls cacao powder 2 tbls milk (almond, oat, cows..) ▪ Put all ingredients in bowl and mix. Should turn into a sticky batter you can roll into balls. Add a dash of milk or water if mixture is too dry. ▪ Bake at 180°C for 15 mins (or until slightly browned) Enjoy!
