Weekends are for brunch! Benedict is my favorite! Here is my Instant Pot Short Rib Benedict recipe: 4 servings 4 beef short ribs ½ cup red wine or beef stock ½ onion, sliced 2 cloves garlic, minced 1 tablespoon Italian seasoning Salt and pepper to taste 4 red potatoes 1 teaspoon garlic powder Salt and pepper to taste Hollandaise sauce recipe from another post (sooo good to add some green chilies too) 4 eggs to fry or poach for the top 1 tablespoon oil Salt and pepper all sides of your short ribs. Add in oil and turn your Instant Pot to Saute and brown each side. Add in onion and garlic and mix around for a few minutes. Add in wine or stock and scrape the bottom the lift up the brown bits from browning the short ribs. Cover and set the manual high pressure for 35 minutes. While that is cooking heat a pot of water and add in potatoes (poke with fork all over to help with cooking) Preheat oven to 375. Once soft to the fork poke take out and put in a cookie sheet. Smash with the bottom of a cup or plate. Place in the oven for 15 minutes to crisp up. Once the Instant Pot is done let it naturally release for 10 minutes and then flip the top to let out anymore if there is more pressure. Now in the blender make the hollandaise sauce and fry or poach your eggs. Once everything is done place a potato on your plate, onion,(I added leafy greens as well) then meat, egg, and hollandaise. Enjoy… It seems like a lot, but while things are cooking you are making other things so it all works out!
So last week in class we had the opportunity to make hollandaise sauce among few others, I felt the need to remake it at home. And I’m glad I did because this turned out pretty good! I made Eggs Benedict using English muffins from @traderjoes and Black Forest ham, using great ingredients is the key!
This take on eggs benedict >>> shrimp 🍤 • tomato 🍅 • avocado 🥑• spinach • scallions • poached eggs topped with hollandaise on a fresh baked English muffin (+ a side of their smashed potatoes and curried ketchup of course!)
