Pasta!! Who loves pasta?!?! 🙋‍♀️🙋‍♀️ . . Most of the time I use zucchini noodles in place of pasta noodles because they are high in points and I like to eat the most I can for the least amount of points. However, this Rustic Vegetable Pasta recipe from @laloosh has so many veggies that bulk up the pasta that you can have 2 cups for only 4 points. . . Be sure not to skip the lemon juice in this recipe! It wakens up the whole dish and tingles on your taste buds. I also added a sprinkle of crushed red pepper because I like my food spicy. . . I followed the recipe exactly as posted at https://www.laaloosh.com/2015/09/29/rustic-vegetable-pasta/ except for adding the crushed red pepper, a yellow squash, and cherry tomatoes. . . Ingredients . 🍴1 tbsp olive oil 🍴2 tbsp balsamic vinegar 🍴1 medium zucchini (thinly sliced) 🍴1 squash (thinly sliced) 🍴3 medium carrots (peeled and I used my Ninja to pulse) 🍴5 mini red sweet peppers (I used my Ninja to pulse) 🍴2 cups sugar snap pea pods 🍴8 cherry tomatoes (cut in quarters) 🍴4 oz whole wheat spaghetti (uncooked) 🍴3 Tbsp lemon juice 🍴2 Tbsp Italian seasoning 🍴Salt and pepper to taste . when you want to hold onto summer but you’re itching for those fall vibes- cue this pan seared salmon with an apple walnut crust and grilled broccolini courtesy of @platejoy. . i use to be in love with buying cook books in college and bookmarking recipes i wanted to try out. now here i am in 2019 - a true millennial, digitally checking off another delicious @platejoy meal off my personalized plan. the best part, it’s like i have a cookbook with recipes justttt for me - i mean since i did fill out a quiz asking me about my lifestyle and preferences 💁🏼‍♀️ . here’s what you need for the recipe (for 2 servings): 2 ¼ tsp smoked paprika 1 tbsp olive oil 12 oz salmon (6 oz portions) ½ apple ¼ cup chopped parsley ¼ cup walnuts 2 ¼ tsp honey brocollini s & p . for my variation on the recipe i coated the salmon with olive oil, paprika, s & p, and cooked that in my cast iron skillet over the stove. the crust is a mix of the apple, walnut, parsley and honey that i tossed together and laid on a parchment paper-lined baking dish and baked at 400 F for about 10 minutes. i then topped the pan seared salmon with the crumble and served with some grilled broccolini #myplatejoy

@chaipani’s Cumin-Lime Vinaigrette recipe is officially out in the world (check the link in our bio for the deets)...and while that’s extremely exciting news all by itself...the story behind its creation is equally fascinating. 💛 ⁣⁣ ⁣⁣ In the weeks leading up to Chai Pani's opening in back in 2009 (10 years ago today!), the menu was still getting final tweaks — during which Molly Irani (@chaipanimom) made it her mission to convince Meherwan to put a salad on the menu. It didn't fit the typical ‘street food' or 'home-style thali' parameters of Chai Pani, so Meherwan was hesitant...butttt Molly’s argument was solid — being that much of the menu was inspired by his mom's home cooking and she's a HUGE salad fan. @MeherwanIrani’s mom grows her own organic vegetables and fresh salads are always a staple on the Irani family table in India, even though it's not considered "traditional" Indian cooking (how she came to develop a taste for Western-style salad is a story for another day). So, Meherwan listened to his wife (smart man 🤙🏽) and added a fresh salad to the Chai Pani menu. ⁣⁣ ⁣⁣ The now popular Chai Pani vinaigrette had previously served as a “go-to” dressing for Molly at home...inspired by a recipe she once clipped from a magazine. The vinaigrette was adapted slightly to fit the flavor profile of the salad and the corn bhel on the menu...and it worked beautifully. 👌🏽 All these years later, Molly still has that clipping in her recipe binder (cute) w/ her original notes from the first round of recipe testing. ⁣🧡⁣ ⁣ The dressing evolved over time, “the current evolution being the best yet!” says Molly...and she’s not alone. We’re biased, but really...it’s delicious. Even when the salad on the menu changed, the dressing used remained the same.
