Every night on my drive home from work, after an extremely long day, I would dread what to make for dinner. Most nights I would convince myself to stop and grab fast food or just settle for one (okay, two or three) bowl(s) of cereal. My diet consisted of fast food, frozen food and processed sugars. I lacked energy, and a whole lot of confidence. I would blame my busy days for my lack of nutrition, when really the only thing I needed to blame was myself. Then Ethan introduced me to meal prepping. I thought it was lame. I thought it took too much time. I honestly refused to do it until we got married. But then I learned that spending 2 hours on Sunday was better than resorting to cereal 3 nights a week. I learned that crockpots are my best friend. I learned that fueling my body would give me more energy to tackle those long, busy days. It wasn’t easy at first. Pinterest became my saving grace, but I fumbled through it week by week. Now I’m nourishing my body and making my week nights much simpler. Plus, I’ve found DELICIOUS recipes that I look forward to eating all week long. Nutrition can be hard, but take it from someone who’s been there— you can’t survive off fast food and cereal. Take the time to prep for your week so you can just grab and go and not think twice. Failing to plan is planning to fail.

=T H E M O V E W E S T= This is me, 8 years ago, taking a selfie at a rest stop just outside of Glenwood Springs, CO. I had been on the road for almost a week, and was just about finished with the 2nd to last leg of my trip across the country - NJ to SoCal. It’s always interesting to reflect on October of 2011 - what a strange and vulnerable time. I am frequently asked, “What brought you to Denver?” So, as I replay the week in my head, 8 years later, I feel compelled to share some pieces of that story.
