Mushrooms and fresh pastas = Love ♥⁣ ⁣ It's so funny to make fresh pastas, I love the feeling and you can be so creative with the shapes 😀⁣ ⁣ We picked these mushrooms (boletus) in the forest and they are soooo nice 😍 ⁣ ⁣ We began the process of preserves yesterday. Pumpkin pie + ice cream that is meant for breakfast! 🙌 This Pumpkin Pie Oatmeal recipe is inspired by @minimalistbaker and topped with Banana Nicecream for a naturally sweetened breakfast that tastes like dessert!⁠ 🍨⠀ ⁠⠀ Pumpkin Butter⁠ (to mix into oatmeal)⁠⠀ 1 15-ounce can pumpkin puree (not pumpkin pie filling)⁠⠀ 1/4 cup coconut sugar ⁠⠀ 2 Tbsp pure maple syrup ⁠⠀ 1/4 cup unsweetened apple juice⁠⠀ 1/2 Tbsp lemon juice⁠⠀ 1 1/2 tsp pumpkin pie spice⁠⠀ 1/4 tsp ground cinnamon⁠⠀ 1 pinch sea salt⁠⠀ ⁠⠀ Maple Cinnamon Pecans⁠⠀ 1/2 cup pecans⁠⠀ 2 tsp coconut oil (melted)⁠⠀ 1 Tbsp coconut sugar⁠⠀ 1 Tbsp pure maple syrup⁠⠀ 1 pinch each of salt + ground cinnamon⁠⠀ ⁠⠀ Pumpkin Oats⁠⠀ 1 1/2 cups of cooked oatmeal⁠⠀ 1/4 tsp ground cinnamon ⁠⠀ 1/4 tsp pumpkin pie spice⁠⠀ 2-3 Tbsp pure maple syrup ⁠⠀ 1/4 cup pumpkin butter⁠⠀ 3 scoops Banana Nicecream⁠⠀ Coconut whipped cream ⁠(optional) ⁠⠀ ⁠⠀ Instructions⁠⠀ 1. To make pumpkin butter, add all pumpkin butter ingredients to a large saucepan or pot over medium-high heat and stir to combine. Once it begins bubbling, reduce heat to low and simmer. If bubbling too vigorously, reduce heat to low.⁠⠀ 3. In the meantime, preheat oven to 350 degrees F (176 C) and arrange pecans on a foil-lined baking sheet. ⁠⠀ 2. Continue cooking the pumpkin butter, uncovered, for 15-20 minutes, stirring occasionally. Once cooled completely, transfer to a large glass container. Set aside.⁠⠀ 4. Once oven is ready, add pecans to oven and toast for 5 minutes. While they’re baking, melt the coconut oil in microwave. ⁠⠀ 5. Remove pecans from oven and add directly into a bowl. Add coconut oil to pecans, toss and add the rest of the ingredients, mix up all the ingredients. Spread them back onto the baking the sheet and bake for another 5-7 minutes. We love @a_healthypassion Israeli Couscous-Stuffed Peppers with Parsley Chimichurri AHP 391 for a regular macro day recipe. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients:  2 Bell Peppers 1 Zucchini 1/2 cup Israeli Couscous 1 Shallot 3 Garlic cloves Parmigiano Reggiano 1 bunch Parsley ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Pantry: Olive Oil Celtic Salt Red Pepper Flakes Veggie Stock Cubes Red Wine Vinegar ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Directions:  1. Preheat the oven to 425 degrees. Bring 1 cup of water to a boil. Add 1/2 of a veggie stock cube and 1/2 cup of couscous and simmer for 10 minutes. If you're using a rice cooker, add in the couscous and 1/2 of a veggie stock cube and turn it on. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Halve the bell peppers and scoop out the seeds. Place on a parchment-lined baking sheet and drizzle with olive oil. Season with Celtic Salt and red pepper flakes and roast for 15 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. Finely chop the shallot, thinly slice the garlic and dice the zucchini. Add them into a skillet over medium heat with a drizzle of olive oil and a pinch of Celtic Salt and red pepper flakes. Cook for 10 minutes to soften. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4. Finely chop 1/2 cup of parsley and add it to a bowl. Stir in 3 tbsp of olive oil and 2 tbsp of red wine vinegar. Season with Celtic Salt and red pepper flakes and set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5. Once the couscous is finished cooking and the zucchini mixture is soft, add them into a bowl. Stir in half of the parsley mixture and grate in half of the Parmigiano Reggiano cheese. Fill the peppers and finish with the remaining Parmigiano Reggiano and pop under the broiler. Broil for 3-5 minutes to brown the cheese. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 6. I was walking through target with my mom the other day, and since 3/4 of the store is decked out in spooky-pumpkin-Halloween everything, we ended up browsing around the candy aisles. We started talking about how insane it is that this is the type of food that we celebrate with & pass down to children.
