Easyjet summer seats being released this Thursday, I glanced ahead to see where I could catch a break. Summer 2020 is super busy so May and October are looking good for a lengthy break. I'm regretting the break last month mid season. Yea, it broke things up. On the down, it created a backlog which I'm only now starting to get on top of two weeks later and that's by having to work round the clock. The stand up desk has been a game changer, it's the eyes that need the rest. Anyone else staying up late Wednesday night to book seats? What an amazing experience so far! County Louth yesterday and Portstewart today. Portstewart is truly an amazing experience. Sampling the local flavor of Gin and Tonics and Guinness! Guinness onion soup, with croutons and Cahill cheese flavoured with stout. Really really good. The photo does not do it justice. Reminds me of the last time I made carbonnade s la Flamande. And just to throw out a recommendation:.I made it with Denver steak, which is a nicely marbled part of the chuck/shoulder. You sometimes see it called chuck short ribs. Best beef stew meat, cook long and slow.
Eating yummy healthy food like I have been trying to at home has proved to be relatively difficult while traveling. ✈️ . . . But I have come across a few spots that have exactly what I’m looking for (lots of fruits & veggies, low gluten & dairy- I eat this way because it’s what makes me feel best and not because of an allergy, so I do stray from this if it is a special occasion or if there are no other options). 🥬🥕🍍 . . I apologize that my food is half eaten in the picture it was just that good (and I was so hungry after touring a castle). 🏰 . . . Lunch was a spinach salad with sweet potato, avocado, quinoa, broccoli, pumpkin seeds & pomegranate with a glass of soda water & lime. SOO GOOD. 🥗 It was so nice to have such a nutrient packed bowl instead of just greens, fruits & nuts. The trip to #northernireland has been amazing. The people working in the service industry here are some of the most helpful and friendly I have ever met. Today was spent driving around the County Antrim coast and it is stunning. If you’re gonna do a trip, following the #gameofthrones map is a brilliant idea- even if you’re not into the show- as the location scouts have done all the hard work for you. They filmed in some of the coolest places I have ever seen. This is in no way an ad. It’s all paid for. I just think it’s on our doorstep and if you haven’t visited, you should put it on your list. Now, wine!
